Implementation methology

The Operations Team takes a holistic approach to dairy cow farming for the production and fattening of black and white calves. Its methodology is based on three interrelated axes.

The development of a unified management system for farms is the first axis of action for harmonizing production factors and producing calves whose fattening will give the desired quantity and quality of meat. The second axis concerns a series of actions to evaluate the rate of growth and development of calves under different nutritional programs to ensure maximum carcass yield with optimal meat quality. Calf groups of approximately 20 animals each are used for each dietary treatment and desired slaughter time estimated at 12 and 14 months respectively.

The third axis concerns a series of measurements and laboratory tests of meat samples in order to objectively evaluate the quality of the meat produced and the possibility of commercial exploitation with an increase in its added value. The assessment of meat quality is based on: a) the proportion of the carcass in muscles, fat and bones, b) the assessment of physicochemical parameters (tenderness, juiciness), colouring, redox potential, active water coefficient, fat oxidation, total fat concentration / total proteins/ ash, with imaging and analytical techniques, c) examination of organoleptic properties with palatability tests by a group of examiners.

The selection of appropriate protocols for the use of the above technologies is carried out based on the experience and know-how of the project’s research bodies.
